If my Gingerbread House was just too over the top, then these Mini Gingerbread Houses may be just the thing for you!

These teensy tiny little confections are a scant 2″ x 2″! This clever all-in-one cookie cutter cuts out all the pieces you will need to construct your own mini gingerbread house.

Just mix up a batch of your favorite gingerbread cookie dough and get rolling (I used leftover dough and icing from the big gingerbread house). The dough should be rolled approximately 1/8″ thick for cutting. I used a 3″ scalloped round cookie cutter to make a gingerbread base for my little houses to sit upon.

Assemble the walls, front and sides and let dry for an hour before “gluing” onto the round base. Let dry for another hour then “glue” on the roof pieces.

Lots of royal icing and edible glitter, sparkling sugar and Christmas candies make for one sweet little edible house that’s a terrific hostess gift, party favor or even a place setting at your holiday get together.
